Where does the term “shred up” come from in snowboarding, what is its origin?

There’s no way to answer this question. It’s too common of a term that has been around for as long as snowboarding itself. It’s like trying to figure out the origins of “giving the bird”.

I know you didn’t ask this, but since everyone else is explaining what the term means, I’ll do the same.
